“Our forte is midday. People come to a place that is aesthetically beautiful and we try to remember the old Punta del Este. It is named after Chiringo because the three of us fell in love with the chiringos, which are bars, on the beaches of Spain,” she remembers.

The parador also has a great environmental commitment and recycles almost 85% of the waste it generates. “Since we started, we have a strong conviction to respect the environments at a social and natural level, we have a lot of commitment to sustainability, to taking care of the area and we even do an educational beach cleaning day for the little ones,” he told this newspaper. .

The parador has an extensive menu that responds to the needs of all types of customers, ranging from vegetarian and vegan food to food suitable for celiacs. “We have a very important awareness of the entire environment on a social and natural level, we want José Ignacio to continue developing in a conscious and responsible way. We started three by three and today, luckily, we have a structure that allows us to serve 120 diners,” he said at the end.
